Ingredients
- 1 medium cauliflower, cut into florets
- 2 tbsp extra virgin olive oil
- 0.5 tsp sea salt
- 0.5 tsp black pepper
- 1 tsp ground cumin
- 0.3333333333333333 cup tahini
- 2 tbsp fresh lemon juice
- 1 garlic clove, minced
- 3 tbsp water (or more as needed)
- 2 tbsp fresh parsley, chopped
- 2 tbsp toasted pine nuts
- 1 tsp paprika
- 1 Lemon wedges for serving

Preheat the oven to 425°F (220°C).

Toss the cauliflower florets with olive oil, salt, pepper, and cumin.

Spread evenly on a baking tray.

Roast for 25–30 minutes, turning halfway through, until golden and tender.

Meanwhile, whisk together tahini, lemon juice, garlic, and water until smooth and creamy.

Add additional water if needed to reach a pourable consistency.

Transfer the roasted cauliflower to a serving platter.
