
Lebanese Mujadara
A wholesome Lebanese dish made with lentils, rice, caramelized onions, and warm spices for a comforting plant-based meal.

Ingredients
- 1 cup brown lentils
- 1 cup long-grain rice
- 3 large onions, thinly sliced
- 3 tbsp extra virgin olive oil
- 1 tsp ground cumin
- 0.5 tsp ground coriander
- 1 tsp sea salt
- 0.5 tsp black pepper
- 3 cups vegetable broth
- 1 Fresh parsley for garnish
- 1 Lemon wedges for serving
Instructions

Cook the lentils in water for about 20 minutes until nearly tender. Drain.

Heat the olive oil in a large skillet over medium heat.

Cook the sliced onions slowly for 20–25 minutes until deeply caramelized.

Remove half of the onions and reserve for garnish.

Add the cumin, coriander, salt, and pepper to the remaining onions.

Stir in the rice and cooked lentils.

Pour in the vegetable broth and bring to a boil.

Reduce the heat to low, cover, and simmer for about 20 minutes until the rice is tender and the liquid is absorbed.

Allow the Mujadara to rest for 10 minutes before fluffing with a fork.

Top with the reserved caramelized onions, garnish with parsley, and serve with lemon wedges.
