Ingredients
- 2 cups fresh cilantro leaves
- 1 cup fresh parsley leaves
- 2 green chilies, seeded for a milder sauce
- 4 garlic cloves
- 2 tbsp extra virgin olive oil
- 2 tbsp fresh lemon juice
- 1 tsp ground cumin
- 1 tsp ground coriander
- 0.25 tsp ground cardamom
- 0.5 tsp sea salt
- 2 tbsp cold water (if needed)

Wash and thoroughly dry the cilantro and parsley.

Add the herbs, green chilies, garlic, cumin, coriander, cardamom, lemon juice, olive oil, and salt to a food processor.

Pulse several times until finely chopped.

Blend briefly while slowly adding the cold water if a thinner consistency is desired.

Taste and adjust the seasoning or lemon juice as needed.

Transfer to a serving bowl or airtight jar.

Refrigerate for at least 30 minutes before serving to allow the flavors to develop.
