Ingredients
- 2 whole wheat pita breads
- 1 cup labneh
- 1 small cucumber, thinly sliced
- 1 medium tomato, sliced
- 8 Kalamata olives, sliced
- 2 tbsp chopped parsley
- 1 tbsp chopped fresh mint
- 2 tsp za'atar seasoning
- 1 tbsp extra virgin olive oil
- 0.25 tsp sea salt
- 0.25 tsp black pepper
- 1 Mixed greens (optional)

Warm the pita breads for 2–3 minutes until soft.

Slice each pita open to create a pocket.

Spread the labneh evenly inside each pita.

Layer the cucumber and tomato slices.

Add the sliced Kalamata olives.

Sprinkle with parsley, mint, za'atar, salt, and black pepper.
