Ingredients
- 2 cups red lentils, rinsed
- 1 large onion, chopped
- 1 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 2 tbsp extra virgin olive oil
- 1 tsp ground cumin
- 1 tsp ground turmeric
- 0.5 tsp ground coriander
- 0.25 tsp paprika
- 6 cups vegetable broth
- 1 tbsp fresh lemon juice
- 1 tsp sea salt
- 0.5 tsp black pepper
- 1 Fresh parsley for garnish
- 1 Lemon wedges for serving
Instructions

Heat the olive oil in a large soup pot over medium heat.

Add the onion, carrots, and celery. Cook for 6–8 minutes until softened.

Stir in the garlic and cook for 1 minute.

Add the cumin, turmeric, coriander, and paprika. Cook for 30 seconds until fragrant.

Add the rinsed lentils and vegetable broth.

Bring to a boil, then reduce to a gentle simmer.

Cook for about 25 minutes until the lentils are very soft.

Blend the soup until smooth using an immersion blender or countertop blender.

Stir in the lemon juice, salt, and black pepper.

Serve hot with chopped parsley and fresh lemon wedges.
