
Healthy Sesame Tahini Cookies

Ingredients
- 1 1½ cups whole wheat flour
- 1 tsp baking powder
- 0.25 tsp sea salt
- 0.3333333333333333 cup tahini
- 2 tbsp extra virgin olive oil
- 3 tbsp honey
- 1 large egg
- 1 tsp vanilla extract
- 2 tbsp toasted sesame seeds
- 1 tbsp chopped pistachios (optional)
- 1 tsp ground cinnamon
Instructions

Preheat the oven to 350°F (175°C).

Line a baking tray with parchment paper.

Whisk together the whole wheat flour, baking powder, cinnamon, and salt.

In another bowl, mix the tahini, olive oil, honey, egg, and vanilla until smooth.

Gradually stir the dry ingredients into the wet ingredients until a soft dough forms.

Fold in half of the toasted sesame seeds.

Roll the dough into small balls and place them on the prepared tray.

Flatten each cookie slightly with your hand or the bottom of a glass.

Sprinkle the remaining sesame seeds and chopped pistachios over the tops.

Bake for 12–15 minutes until lightly golden around the edges.

Allow the cookies to cool on the baking tray for 5 minutes before transferring to a wire rack.
