Ingredients
- 12 sheets whole wheat phyllo pastry
- 0.3333333333333333 cup extra virgin olive oil
- 1 cup finely chopped pistachios
- 0.5 cup finely chopped walnuts
- 1 tsp ground cinnamon
- 0.25 tsp ground cardamom
- 1 For the syrup:
- 3 tbsp honey
- 3 tbsp water
- 1 tsp fresh lemon juice
- 1 tsp orange blossom water
- 1 Extra chopped pistachios for garnish
Instructions

Preheat the oven to 350°F (175°C).

Line a baking tray with parchment paper.

Mix the pistachios, walnuts, cinnamon, and cardamom in a bowl.

Lay one sheet of phyllo on a clean surface and lightly brush with olive oil.

Place another sheet on top and brush again.

Spread a thin line of the nut mixture along one long edge.

Roll tightly into a log and place seam-side down on the baking tray.

Repeat with the remaining pastry and filling.

Lightly brush the tops with the remaining olive oil.

Bake for 25–30 minutes until crisp and golden.

Meanwhile, combine the honey, water, lemon juice, and orange blossom water in a small saucepan and warm gently.

Pour the warm syrup over the hot baklava rolls immediately after baking.

Allow the rolls to cool for at least 30 minutes.

Garnish with chopped pistachios before serving.
